Turkey Bacon and Veggie Breakfast Frittata
Here is a breakfast recipe you can put together the night before and cook in the microwave for less than 15 minutes to have a hot, nutritious breakfast for busy mornings! I have even been known to make this for my hubby to bring to work, but only because it is quick and easy. I'm not a martyr!
- 6 Eggs beaten
- 4 slices Turkey Bacon chopped into small pieces
- 1 Tbsp Olive Oil
- 1 Red Bell Pepper diced
- 2 Green Onions chopped
- 1/2 Zucchini diced or
- 1 cup Broccoli roughly chopped
- 1/2 cup Cheddar Cheese shredded
- 1/4 cup Milk mixed with eggs
- 1 tsp Salt
- 1 tsp Pepper
In the Rockcrok, Cook bacon into 1 Tbsp olive oil on the stovetop.
Add pepper and broccoli or zucchini and saute.
Turn off heat . Add egg mixture straight to Rockcrok.
Stir in half the cheese and the green onions.
Top with remaining cheese, microwave 12-15 minutes.
If you have extra time, broil in oven for a few minutes to brown the cheese topping.
I make this recipe using my Pampered Chef Rockcrok in the Everyday 2.5 quart size, which is safe for Stovetop, Oven, Microwave and use on the Grill.
If you are using a regular casserole dish, you can saute the turkey bacon and veggie right in the dish, you will just need to heat the oil in the oven instead of on the stove. Add bacon and return to oven, stir occasionally to cook it completely.
Next add the veggies and return to oven. Stir to fully coat with bacon and oil.
Add egg mixture and return to oven to bake. This will take about 40 minutes to bake completely. There will be no need to broil if using this method.
